INGREDIENTS
2&¼ cups warm Water2 tablespoon Sugar1 tablespoon Yeast2&¼ teaspoon Salt2 tablespoon Canola Oil6 cups Flour
METHOD
Combine the water, sugar and yeast in the standing mixer with the dough hook.Add the salt, oil and 3 cups of flour and mix.Then gradually add the other 3 cups of flour and knead the dough until it leaves the side of the bowl and becomes soft but firm.Clingwrap the bowl and leave to rise. Once it's doubles in size punch down and divide it into half. Take the one half and pat it into a slightly flat rectangular shape. Fold half the dough over until the middle and press down. Repeat with the other half.Then take either end of the dough and fold it very slightly and press down. Make deep slits on the top taking care that it doesn't cut the loaf completely. Prewarm the oven on 180 degrees, and bake until crisp and golden in colour on the outside and soft on the inside.
INFO & TIPS
To crisp the bread, once the oven is warm put the loaf in and quickly toss 3 cubes of ice in the tray at the bottom of the oven and quickly but gently close the oven door.
The steam from the ice will crisp the outside of the loaf.
