Cinnamon Sugar French Toast

3 Extra Large Eggs
1⁄4 teaspoon Baking Powder
2 Tablespoon Water
A Good pinch of Chillie Powder(optional)
A pinch of Cumin Powder(optional)
1⁄4 teaspoon crushed dry chillies(optional)
Salt and Pepper to taste
~whisk together the eggs and spices
~ dissolve the baking powder in the water, and add to the egg mixture and whisk well.
~Remove the crusts off 6-8 slices of bread, I used Brown bread, but white bread would work just as well.
~roll these crust-less breads flat, using a rolling pin.
~brush the one side well with the egg mixture, this allows for the bread to hold shape when rolled.
~Roll up the bread, like for swiss roll, and dip the entire roll into the egg mixture, coat well all around and the rounded sides as well.
~ shallow fry in oil, that’s medium hot, turning a few times to ensure its lovely golden brown all around.
~when done, cool slightly and roll in cinnamon sugar, prepared as below.

*1⁄2 Cup Castor Sugar
*1⁄4 teaspoon cinnamon powder
**the excess of this may be stored in an airtight container, in a dry cool cupboard, for sprinkling on pancakes or doughnuts.
All that’s left to do now is sit back and enjoy with your favourite cuppa warm beverage.
