INGREDIENTS
Dry ingredients:1 & ½ cup all purpose flour1 & ½ tspns baking powder¼ teaspoon bicarbonate of soda ½ teaspoon green Elachi (cardomom) powder¼ teaspoon fine salt
Wet ingredients:2/3 cup normal white sugar¾ cup mango pulp¼ cup milk⅓ cup vegetable oil1 teaspoon vanilla essence
METHOD
Preheat the oven to 180 degrees. Position the rack in the middle of the oven. Grease a loaf pan with little oil / butter and dust with flour to coat it. Keep aside.
In a mixing bowl, sift all the dry ingredients well and set aside.
In another mixing bowl, add all the wet ingredients, whisk well until everything is well combined.
Make a well in the bowl containing the dry ingredients and add the wet ingredients. Mix just until combined. Do not ovremix. Transfer the batter to into loaf pan and bake for about 40 minutes or until a toothpick inserted in comes out clean. Transfer the loaf onto a cooling rack. Let it cool down for 10 minutes then remove from the loaf pan and cool on the rack completely. In order to get clean slices, cut the loaf only once it has completely cooled down.
