INGREDIENTS
1 packets tennis biscuits Half cup melted butter 1 by 432g tin crushed pineapples ( 281g drained) Drain the pineapple crush 1 by 250g full fat plain cream cheese - u can use any brandHalf cup icing sugar 1 teaspoon vanilla 2x250ml fresh cream Juice of half lemonFor topping 1 cup fresh cream Nuts Des coconut Pineapple rings Cherries
METHOD
Melt the butter Crush the tennis biscuits and add butter to it Mix well and flatten Refrigerate for 1 hour
Now prepare filling Beat the cream cheese untill smooth and creamyAdd vanilla , lemon juice and icing sugar beat till well combined Stirr in the well drained crushed pineappleGently fold in the two cups of whipped cream Spread the filling over the tennis biscuit crust Smooth top with spatula Refrigerate for 4 hours is best overnite to allow flavors to blend Before serving top with fresh creamI use the can that has a nozzle It is slightly sweet and is delicious on top of this dessertDecorate with chopped nuts , Des coconut . Chocolate etc etc anything if your choice
