INGREDIENTS
3 eggs2 teaspoon coffee powder2/3 c sugar
½ c vegetable oil (sunflower)¾ c flour¼ c cocoa powder 1 teaspoon baking powder¼ teaspoon baking soda ¼ c milk1 teaspoon vanilla essence
METHOD
Using an electric mixer,or by hand,mix the eggs,coffee powder and sugar until double in volume and light and frothy.
Then add in ½ c oil. Sieve the flour,cocoa,baking powder and baking soda,over the wet ingredients. Fold in gently using a spatula.
Lastly add in the milk and vanilla essence.
For baking on the stove:
Preheat a pot,(large enough to hold the loaf pan) on high for 5 minutes. Place the pan onto a rack.Lower the heat (low) and cook for 30 to 40 minutes or until done.
Grease a loaf pan and add the batter
Or Bake in a preheated oven at 170 for 30 to 40 minutes.
INFO & TIPS
I used the stove to cook this,with good results.
Ensure the milk is at room temperature.
I used half a cup of brown sugar,as I like to reduce. You may use white sugar.
