INGREDIENTS
5 lamb shanks (1.8 kg)1 full tablespoon garlic1 teaspoon green chilli paste1 teaspoon ginger garlic1 cube chicken stock/ beef stock1 dash Worcester sauce1 heaped spoon of ground pepper freshly groundLittle salt ½ teaspoonGarlic and herb spice a few shakes1 tablespoon rosemary herb About 1 cup of water
METHOD
1.Make a paste with all the spicesRub over the shanks2. Place into the instant pot on slow cook for 4 hours with the water.3. Open pot turn the pieces. 4. Put on high pressure for 20 to 30 minutes.If not soft cook some more5 Rest the shanks in the juice in fridge6. Take out congealed fat.7. Make it hot in the pot8. Remove shanks place in baking tray.9 . Mix sweet chilli sauce,siracha sauce , chilli garlic and tomato sauce about half cup. 10.Reduce the water that the shanks were cooked in. Mix in the sauces .Pour over shanks and grill in oven till a lovely glaze forms.Serve with mash and gravy and veg as a side.
