INGREDIENTS
250g chicken fillet in thin strips (+/- 2 fillets)250g baby button mushrooms cut in halves250g broccoli in small florets (+/- 1 medium head of broccoli) 250g linguine, cooked al dente (reserve the pasta water for the sauce)2 tablespoon olive oil3 teaspoon crushed garlic2 teaspoon cajun spice2 teaspoon dry parsleySalt and pepper to taste½ tub cream cheese 2 cups milk ½ cup grated Parmesan
METHOD
Heat olive oil and add garlic, braise for a minute, then add chicken with cajun spice and cook until done but not dry. Add mushrooms and cook until done, then add broccoli. Once the broccoli is tender but not overcooked, add cream cheese, milk, parsley, salt and pepper. Simmer until sauce thickens, then stir in Parmesan and add the pasta. Once pasta is added, if the sauce becomes too thick, add pasta water as needed to loosen the sauce. Enjoy!
