INGREDIENTS
Chips100g cream of maize (fine mielie meal)100g flour75g water½ teaspoon salt
Seasoning:½ teaspoon crushed black pepper½ teaspoon red chilli flakes1 teaspoon paprika½ teaspoon garlic powder2 pinches crushed jeera(secret ingredient! They call it cumin)½ teaspoon brown sugar½ teaspoon salt, or little more if needed
METHOD
Get the seasoning mix ready and set aside. You can grind it in a coffee grinder to get it super fine. If this does not interest you, simply season the chips with salt/pepper.
ChipsMix all the ingredients together in a bowl. I always need just another Tablespoon or so of water. It must be firm but not crumbly.Knead well, cover and rest for 30 minutes.
Divide dough out into equal sized balls, about 8 or 9. Now roll each one very thin and cut into strips or triangles.
Fry in hot, shallow oil until well golden brown.Drain first in a colander then spread onto a nice flat tray lined with Carlton paper.Sprinkle with seasoning.
Enjoy your crispy snack with Mexican food (salsa and guacamole 😍)... Or anything you fancy!
