MUGH DHAL

Ingredients:
1 cup mugh daal (soak overnight)
½ cup oil
1 large onion, chopped
2 medium tomatoes, liquidised
1 teaspoon garlic paste
Salt and pepper to taste
1 teaspoon lemon pepper
1 heaped teaspoon Kashmiri chilli powder
½ teaspoon ground cumin
1 teaspoon ground coriander
1 teaspoon chicken spice (optional)
½ teaspoon turmeric
¼ cup dry or fresh fenugreek (Methi (Fenugreek)) leaves
1 large carrot, grated
½ green pepper, chopped

Instructions:
1. Sauté:Heat oil in a pot. Add chopped onion and cook until soft. Add garlic paste and cook for 1 minute.
2. Add Tomatoes & Spices:Add liquidised tomatoes and all the spices. Cook for 5 minutes on low heat.
3. Add Veggies & Daal:Add grated carrot, green pepper, soaked daal, and enough water to cover. Bring to a boil.
4. Simmer:Lower the heat, cover and cook until daal is soft and tender. Stir occasionally.
5. Garnish & Serve:Top with chopped coriander and green chillies. Enjoy with roti and a squeeze of lemon!
