RECIPE
Wash and Soak 1 cup Chana dhal few hours
Boil with ½ teaspoon bicarb
Till soft but whole and not mushy
Keep aside drain.
In pot heat +-¼ cup ghee (Clarified butter) or oil
Add 1 medium sliced onion
½ teaspoon whole Jeeru (Cumin)..2 cinnamon sticks 2 cloves 2 Elachi (cardomom) and or pinch of ground Elachi (cardomom)
Few curry leaves
Add 2 torn up Red whole chilli or slit 2 green chilli
Braise well till onion turns golden in colour
2 cloves sliced garlic (optional)
½ teaspoon ginger garlic (optional)
Add 1 large finely chopped tomato
Add spices
1 ½ teaspoon Dhana jeera
11/2 teaspoon garam masala
+- ½ crushed red chilli or more for med -hot taste
½ teaspoon tumeric (tumeric)
Salt to taste
Braise well all together
Add ¼ cup water cook
Not too dry
Garnish with green dhania (coriander)
Variation:
(Optional is add well steamed brinjal slices when you adding tomatoes)
Enjoy with rotis
