INGREDIENTS
Not quite a pancake, not quite a crumpet... Light and Moreish
1 and ¼ cups flour5 tablespoons cornstarch¼ teaspoon salt 4 teaspoons baking powder (yes, correct)⅓ cup castor sugar
3 eggs¼ cup oil1 and ½ cups milk
Butter, for the pan
METHOD
Whisk dry ingredients together in a large bowl.Mix together eggs, oil and milk.Add to the dry ingredients and whisk until there are no lumps.Set aside, covered, for 30 minutes.
Heat a non stick pan on medium heat. Grease lightly with butter then add in exactly ⅓ cup of batter.It should flow naturally into a large, perfect circle.When bubbles appear and start to pop, carefully flip over.Allow the other side to cook until golden.Remove onto a plate lined with grease proof paper.Repeat with remaining batter.
Serve warm with ice cream/fresh cream, honey, maple syrup. Delicious with finely chopped, toasted walnuts.
INFO & TIPS
This has been a family favourite for years.
~It helps to use 2 pans as you can only cook one crumpet at a time.
~Remember to always have the heat on medium as they burn easily.
