Soft on the inside, golden on the outside — homemade finger biscuits that melt in your mouth 😋

3 large eggs, separated
3 tablespoon + 3 tablespoon castor sugar (divided)
½ teaspoon vanilla essence
½ cup cake flour
1 tablespoon cornflour
Icing sugar (for dusting)

🥣 Method:
1. Prep:Preheat oven to 180°C. Line a baking tray with baking paper.Fit a piping bag with a round nozzle.
2. Whip egg whites:Beat the egg whites until soft peaks form. Gradually add 3 tablespoon sugar, beating until stiff and glossy.
3. Yolks + sugar:In a separate bowl, whisk egg yolks with remaining 3 tablespoon sugar and vanilla until pale and thick.
4. Combine:Gently fold the yolk mixture into the egg whites.
5. Sift & fold:Sift flour over the mixture. Gently fold to combine without deflating the batter.
6. Pipe:Transfer batter into the piping bag. Pipe finger shapes (about 7–8cm long) onto the tray, spaced slightly apart.
7. Dust:Sift icing sugar over the top of the piped fingers.
8. Bake:Bake for 10–12 minutes until lightly golden and set. They should be soft but not sticky.
Switch off oven and leave the biscuits inside to crisp up.
