INGREDIENTS
1kg queen prawns (deveined & butterflied)Garlic & herb butterFish/prawns/seafood spice
Sauce-60g butter1 tablespoon crushed garlic½ teaspoon ground green chilli1 teaspoon Aromat (a South African Spice) spicePinch salt½ teaspoon lemon pepper½ teaspoon black pepper1 teaspoon dried mixed herbs3-4 tablespoon lemon juice1 cup fresh cream (I like to use long life or double thick for a thicker sauce)
METHOD
1. Season prawns with seafood spice and spread on garlic butter.2. Place in freezer while heating up pan. Must be hot.3. Drizzle on some olive oil.4. Fry the prawns till pink. Remove from heat.2. To make suce, melt the butter, add in garlic and chilli and saute.3. Pour in lemon juice.4. Then add in spices and dried herbs.5. Pour in cream and whisk well.6. Bring to a simmer and simmer until thickened.7. Then add prawns into sauce and baste with sauce.8.
