INGREDIENTS
8 pieces chicken4 really ripe juicy lemons8 garlic cloves2 small red chillies1 tablespoon honey4 tablespoon chopped fresh parsleySalt and pepper
METHOD
Place chicken, skin side down, in a large shallow oven proof baking dishHalve the lemons, squeeze the juice and pour into a small bowl, reserve the empty lemon halves.Peel and crush 2 of the garlic cloves and add to the lemon juice. Halve the chillies lengthwise and add to the lemon juice with the honey.Stir well, pour over the chicken and tuck the lemon halves around.Cover and leave to marinate for at least 2 hours, turning once or twice.Preheat the oven to 200°C. Turn the chicken skin side up. Halve the rest of the garlic cloves and scatter over the chicken. Roast in oven for 45 minutes or until golden brown and tender. Stir in the parsley and season with salt and pepper to tastes.Serve hot, garnished with the roasted lemon halves.

This dish relies on the natural sweetness of really ripe lemons. Do not use under ripe fruit.
