Golden, juicy, and whipped to perfection 🍍This pineapple cake is layered with love, cream, and sunshine. 🌞 🍍
Pineapple cake

3 eggs seperated
Beat egg whites until stiff
Beat 3 egg yoks¾ cup sugar⅓ cup oil⅓ cup water 1 teaspoon vanilla essence
Add1 ¾ teaspoon baking powder1 ½ tablespoon cornflour ¾ cup flour.
Fold in egg whitesPour into a round baking tin( or 3 layer round pans.)
Bake until done. 180deg thermofan or 180deg convection oven.
I sliced the cake in 3 layers.
1 large tin crushed pineapple. Strain. Save the liquid.
Pineapple sauce:
Measure out 1 cup of the pineapple liquid.Place in a saucepan with:1 tablespoon cornflour 1 drop yellow gel colouring ¼ cup sugarBring to boil and simmer until it thickens whilst stirring continuously. Leave to cool and refrigerate.
To assemble cake:
Place first layer of cake.Spread with whipped cream.Top with pineapple sauce and crushed pineapple.
Place second layer over and repeat process. Top with 3rd layer.
Place nibbed peanuts onto a piece of baking paper.Roll the sides of the cake into the nuts. Place back onto serving dish or plate.
Spread top with cream, pineapple sauce and crushed pineapple.Pipe cream on the sides of the cake.Place dollops of the pineapple sauce over.Or decorate as desired
