Homemade feta cheese

2 litres long life milkAdd to a pot and bring to a simmer
Add¼ cup lemon juice2 tablespoon yoghurt mixed with little water1 tablespoon salt
Allow milk to curdle.
Close lid and set aside for 15 minutes
Strain mixture out using a tea towel or muslin cloth, reserve 1 cup of the strained liquid.
Allow to drain.Close and place a heavy object over and set aside.I left it in the fridge for a day
Remove and cut into cubes.
For the liquid add1 teaspoon saltFlavoring of choice if preferredI used basilYou can use black pepper, chilli flakes, mixed herbs, Italian herbs etc
Fill a jar with the feta.Top with liquid.Refrigerate
📌 Tips
Use long life milk for better , creamer taste.
You can use immediately but it tastes better after 3 - 4 days.
