Carrot Cake With Fresh Cream

Some cakes are fancy, some are rich… and then there’s carrot cake – homely, cozy & absolutely irresistible 🥕🍰
🥕 Carrot Cake with Fresh Cream

Cake:
3 eggs
1 cup sugar➡️ Beat until fluffy.
Add 1 cup oil and mix.
Add in:
1 ½ cups flour
Pinch salt
3 teaspoon baking powder
2 teaspoon cinnamon
½ teaspoon bicarbonate of soda
Mix in:
2 cups grated carrot
¾ cup chopped pecans
¼ cup water
➡️ Pour into a lined & greased baking tray.Bake at 160°C thermofan or 180°C convection until done.
Topping:
250 ml fresh cream
2 teaspoon vanilla pudding powder
¼ cup icing sugar
➡️ Whip together & spread over cooled cake.Decorate as you like! ✨
