VEGETABLE KALYA
Any vegetable of choice can be used
1 cauliflower1 Butternut1 Sweet potato3 Potatoes3 carrotsSliced green beans
Marinate veggies for a little while with the following
1 teaspoon Salt2 teaspoon chilli powderQuarter teaspoon arad (Turmeric) (Turmeric)1 teaspoon ginger garlicHalf teaspoon garlicBlack pepper2 teaspoon dhana Jeeru (Cumin) (Cumin)Half a cup of yogurt or sourmilkHalf a cup of fried onions3 small tomatoes liquidized
Heat ghee (Clarified butter) (Clarified butter) in a pot, add 1 teaspoon of Jeeru (Cumin) (Cumin), whole red chillies, piece of cinnamon,few elaichi pods and curry leaves..Braise until aromatic, add marinated veggies and cook on low until done, adding water when necessary .
Serve with roti or naan.
