Caramel Sojee (semolina flour)

Ingredients
250 g butter
1 ¼ cups semolina
1 cinnamon stick
1–2 cardamom pods
1 cup brown sugar
1 teaspoon yellow colouring
3 eggs
2 cups milk
½ capful caramel essence
¼ cup salted caramel sauce (plus extra for drizzling)

Method
1. Braise Semolina:In a large pan, melt butter.Add semolina, cinnamon stick, and cardamom pods.Braise on medium heat, stirring continuously, until semolina is lightly golden and aromatic.
2. Prepare Liquid Mixture:In a bowl, whisk together brown sugar, yellow colouring, eggs, milk, and caramel essence until well combined.
3. Combine:Slowly pour the liquid mixture into the braised semolina, stirring constantly to avoid lumps.
4. Cook:Continue to cook on low heat, stirring until mixture thickens.
5. Add Caramel Sauce:Stir in ¼ cup salted caramel sauce and mix well.
6. Serve:Dish out into a serving platter and drizzle with extra salted caramel sauce before serving.
