Sweet, fudgy, and secretly packed with veggies! 👀🍠 These Sweet Potato Brownies are moist, chocolatey, and topped with extra choc chips for that gooey bite. Perfect for when you want dessert with a little hidden goodness.
Sweet Potato Brownies 🍫🍠
Ingredients:
1 large sweet potato (or 3 small ones), boiled & mashed
3 eggs
1 cup sugar
1 teaspoon vanilla essence
Pinch of salt
3 tablespoon cocoa powder
¾ cup flour
1 teaspoon bicarbonate of soda
1 cup chocolate chips (plus extra for topping)
Method:
1. Preheat oven to 180°C (or 160°C for thermofan).
2. In a bowl, mash the boiled sweet potatoes until smooth.
3. Add the eggs and mix well.
4. Stir in sugar, vanilla, salt, and cocoa powder until combined.
5. Add flour and bicarbonate of soda. Mix until just combined.
6. Fold in the chocolate chips.
7. Pour batter into a greased baking tin and spread evenly.
8. Sprinkle extra chocolate chips over the top.
9. Bake for 25 minutes (or 20 minutes in thermofan).
10. Allow to cool slightly before cutting into squares.
