INGREDIENTS
2.5 kg tomatoes
4 small heads of garlic
1 large piece of ginger
2–3 tablespoon olive oil (or any cooking oil)
Salt and freshly ground black pepper, to taste
1–1.5 liters water
1 packet cream of tomato soup (powdered mix)
Fresh herbs, for garnish (parsley, basil, or coriander work well)
METHOD
1. Prepare the vegetables
Peel and clean the garlic and ginger.
Roughly chop the tomatoes if large.
2. Roast
Preheat oven to 200°C (400°F).
Place tomatoes, garlic, and ginger on a baking tray.
Drizzle with oil, season with salt and pepper.
Roast for about 30 minutes, or until nicely grilled, keeping an eye on them so they don’t burn.
3. Blend
Remove from the oven and let cool slightly.
Blend the roasted vegetables along with any juices from the tray until smooth.
Pour the mixture into a large pot.
4. Add liquid & soup mix
In a blender, combine 1–1.5 liters of water with the cream of tomato soup powder. Blend until smooth.
Add this mixture to the pot with the roasted tomato blend.
5. Simmer
Season with additional salt and pepper if needed.
Let the soup simmer gently until heated through and flavors come together.
6. Serve
Garnish with fresh herbs.
Serve hot with garlic buns.
INFO & TIPS
U can add onion if u like, and you don't have to grill the ginger you can bend it with the cream of tomato and add to the soup
