INGREDIENTS
8 whole green chillies
2 eggs
1 onion, chopped
½ cup milk
½ cup mealie meal
½ cup cake flour
½ teaspoon turmeric
2 ½ teaspoons baking powder
1 teaspoon salt
1 teaspoon ground jeeroo [cumin]
½ cup oil
1 cup cream style sweet corn
1 cup washed Methi (Fenugreek) bhaji (Spinach)
1 tablespoon freshly chopped coriander
3 teaspoons sesame seeds (for sprinkling on top)
METHOD
Blend the chillies, eggs, onion and the milk together in an electric jug.
Empty into a dish.
Add the dry ingredients and mix well.
Lightly stir in the corn, bhaji (Spinach), oil and dhania (coriander).
Pour into a greased ovenproof dish [36cm x 22cm] Sprinkle the sesame seeds on top and bake in a moderate oven for about 40 to 45 minutes or until a skewer comes out clean when poked inside. Cool, cut into squares and serve.
