RECIPE
1 kg meat (mutton or beef)4 onions, sliced1 piece cinnamon2 cardamom pods6 cloves2 bay leaves5 green chillies, roughly chopped2 teaspoon salt (or to taste)1 cup water
For finishing1 cup oil1 tablespoon ginger-garlic paste½ cup yoghurt5 green chillies, slit1 teaspoon black pepper
GarnishSliced red chilliesFresh coriander
Method
Add meat, sliced onions, whole spices, chopped green chillies, salt, and water to a pressure cooker.
Pressure cook for 15 minutes until the meat is tender.
Heat oil in a pan. Add ginger-garlic paste and sauté until fragrant.
Add the cooked meat along with the leftover stock. Cook on high heat until all the water evaporates.
Lower the heat, add yoghurt and slit green chillies, and mix well.
Cook until the oil separates.
Finish with black pepper and switch off the heat.
Garnish with sliced red chillies and fresh coriander.
Serve hot with roti and chips.
