INGREDIENTS
500ml (2 cups) cooked smoked fish, flaked250ml (1 cup) cold mashed Pick 'and Pay washed potatoes3 spring onions, finely sliced1 small red chilli, deseeded and finely chopped10ml lemon zest2 eggs, beaten1ml Robertsons Paprika2 ml Knorr Aromat (a South African Spice)2 ml ROBERTSONS Black Pepper100 ml flour50ml sesame seeds125ml (½ cup) oil6 bamboo skewers, soaked in water
METHOD
1. Add the fish, potato, spring onions, chilli, lemon zest, eggs, paprika, Knorr Aromat (a South African Spice) and pepper to a mixing bowl. Stir well to combine.2. Place flour and sesame seeds in a separate bowl or plate.3. Shape mixture into small round balls and then coat with flour and sesame seed mixture.4. Heat oil in a frying pan and fry the fish rounds, moving them around the pan until until golden brown on all sides.5. Thread 4 fish rounds onto each bamboo skewer and serve with a fresh healthy side salad.
INFO & TIPS
I didn’t do on skewers . Serve with veg and roasted potatoes / sweet potatoes
