INGREDIENTS
Baby brinjals sliced lengthways +-500g2 large potatoes cubed1 onion sliced2 medium tomatoes choppedPinch of jeera seedsPinch of mustard seeds½ teaspoon turmeric 2 teaspoon masala4 garlic cloves sliced upCurry leaves
METHOD
Add oil to pot and add in jeera seeds and mustard seedsOnce mustard seeds start to pop add in onions, garlic and curry leaves
When onions are brownAdd in brinjal, potatoes and tomatoes togetherOnce it starts coming to a simmer, turn heat to medium lowAdd in masala and turmericAdd salt to tasteCook on low heat till brinjal is cooked and potatoes are soft
You don't need to add any water, cook on low and the water from tomatoes and brinjal will be released
I like it to let it catch a bit under, gives it lovely taste
