Method for Vegetables
Ingredients
Wash & Wipe the BindaThen chop ends and cut up in rings Braise it in 2 tablespoon Oil To burn off the Stickness once done Keep aside
Take 1 small Brinjal cubed it aand steam it till soft, remove and drain and Keep aside
Cut up half a Pepper in cubes keep aside 1 & half grated or sliced onion2 Grated TomatoeIn A pot on the stove Add 1 Curry spoon OilOnce hot add Little while Jeeru (Cumin) Few Curry leaves 1 Sliced Green ChilliCubed steamed peppersFry Add all the onions allow to change colour to light colour 1 tablespoon Ginger Garlic1 teaspoon sliced GarlicBraise Add1 teaspoon Kashmiri masala+- 1 tablespoon Kashmiri Chilli powder½ teaspoon Crushed red chilli1 teaspoon Tumeric1 & ½ teaspoon Dhana Jeera powderBraise till spices are well infused Now add the tomatoesAnd Tomato paste or puree1 sachet Tomato pasteOr 3 tablespoon tomato pureeCook well add little water to soften the onions etc Now add the steamed Brinjal cubesCook add ½ teaspoon VinegarAdd +-1&½ teaspoon Fine Salt or to taste Now add all the BindaCook for +- 8- 10 minutesOr until done Adjust the Chilli taste Garnish with Chopped Green dhania (coriander) Enjoy with Rotis😋
