INGREDIENTS
This dough can be used to make bread, rolls or a
foccasia. This quantity dough I made 20 rolls and
a foccasia (30cm x 20cm) The rolls I made into
balls the size of slightly smaller than golf balls.
INGREDIENTS:
1 Big potato about 250g peeled. boiled and mashed.
4 cups cake flour
7.5ml yeast (half packet of instant yeast)
1 tablespoon sugar
1 teaspoon salt
½ cup oil (any)
2 medium eggs beaten
¾ cup milk lukewarm
METHOD
Allow potato to cool.
Sift flour, add salt, sugar, yeast and mix.
Add oil and mix to fine breadcrumbs.
Add potato, eggs and milk. Do not add all the
milk at once, you might only need about half a cup.
The dough will be a soft consisitency after you
kneaded it for about 3 minutes. I mixed mine in
the Kenwood chef using the dough mixer. By hand
knead the dough about 5 minutes. Cover with
plastic and thick cloth and let rise for about an
hour.untill double in size. At this point switch
on your oven to 190 C. Knock down the dough and
shape as desired. Brush with egg and sprinkle with
poppy or sesame seeds. Allow to rise while the
oven is heating and bake for 20 minutes.
INFO & TIPS
For the foccasia: Press dough into a baking sheet
and top with desired filling, sprinkle with
cheese, chilli flakes & origanum if preferred or
bake without. I used a topping of:
1onion braised in 2 tblspns oil for 3 minutes.
then add: 1/2 punnet sliced mushrooms,
green chilli to taste
1 tsp garlic crushed
salt and pepper to taste and cook abou 5 - 7 mins.
Cool before topping the dough.
Caramelised onion excluding the mushrooms is also
delicious.
