INGREDIENTS
175g cup sugar.
600ml water.
8 green cardamom pods.
30g self-rising flour.
125g powered skimmed milk.
30g butter/ghee (Clarified butter)
30g cream cheese
15-30ml rose water.
milk.
oil for deep frying.
METHOD
step 1. put 155 g of the sugar with the measured
water in a
wide deep frying pan. stir over gentle heat until
sugar has dissolved, then add
cardamom pods, increase the heat, & boil for 15
minutes to make a light syrup.
reduce heat to lowest setting to keep syrup warm.
step 2. combine flour and powdered milk in a bowl.
rub in butter/ghee (Clarified butter), then add remaining
sugar,cream cheese, rosewater, and enough milk
to form a soft dough. knead light & roll into 18
balls.
step 3.heat oil for deep frying .cook jamuns in small
batches ,keeping them moving in the oil until they
are golden-brown all over.
step 4. remove jamuns with a slotted spoon & drain
on paper towels for 5 minutes remove syrup from
heat and carefully add jamuns. allow to cool to
room temperature in syrup. to serve, transfer
jamuns to individual plates with a slotted spoon ,
then add 2-3 tablespoon syrup.
