INGREDIENTS
1 large brinjal...thinly sliced
3 tablespoon oil
1 clove garlic...crushed
1 onion...finely chopped
100ml tomato puree
5ml dried origanum
30ml tomato paste
200g cherry tomatoes...halved
mozzarella cheese...as much as desired
METHOD
Brush brinjal slices with oil & grill 4 minutes on each side.
Braise onion in oil until soft, then stir in garlic- fry 2
minutes then remove from heat.
Mix tomato puree, tomato paste & origanum together &
spread over 2 thin pizza bases or 1 large base.
Top with grated or sliced mozzarella cheese, brinjals 7
cherry tomatoes.
Bake 15mins until cheese is bubbling.
INFO & TIPS
Garnish with fresh basil leaves & serve.
