INGREDIENTS
1 cup oil
1 cup sugar
2 cups gratd carrots
¾ cup pecan nuts choppd
3 teaspoon bakin powder
1 and ½ cup flour
2 teaspoon cinnamon
Pinch salt
½ teaspoon bicarb
¼ cup water
3 eggs
METHOD
Beat eggs and sugar very well. Add oil and beat till light and fluffy,add sifted ingredients and beat well,add carrots and nuts.Add water and beat, bake @ 180 for 30-40 minutes.U can top with cream cheese icing
