INGREDIENTS
125g butter/margarine
250ml orange juice
3 eggs
1 ½ - 2 cups sugar
grated rind nof 1 orange
500ml coconut
250ml water
250ml cake flour
3 teaspoon baking powder
pinch of salt
METHOD
Beat together butter, eggs & half the sugar.
Stir in orange juice & rind. Stir in coconut & sifted
flour, salt & baking powder.
Pour into greased 1,5 litre pie dish. Bake @ 180*C
for 35 minutes until golden brown.
Boil water & remaining sugar for 5 minutes. Pour the
hot syrup over tart as soon as it comes from oven.
