INGREDIENTS
¾ kg Chicken filletLemon and herb spiceSaltCrushed black pepper 2 cloves Crushed garlic1 bottle @thaicocosa coconut milk drink½ teaspoon maizena (corn flour)¼ cup water1 Lemon juiceSpring onions1 tbspHoneyRed chilli flakesButter (just a small blob, for extra taste)2 tablespoon Oil
METHOD
Cut the fillet in either 2-3 thin pieces, Marinate with the lemon and herb, salt & pepper.Add some 1 tablespoon oil and some butter to a skillet and cook the fillet on high to get a nice brown sear, cook in small batches and set aside,
Add the spring onions and sauté for a few minutes +-30 seconds, just to soften a little, than add the chillies, honey, garlic and lemon juice, Allow to cook for a few minutes, than add the coconut milk. Add salt if needed.Mix the maizena (corn flour) with water and add it to the pot, allow to thicken slightly Add the chicken and cook for a few minutes and allow to heat through, garnished with spring onions and dhana.Serve with fresh salads or mixed veggies or any side of choice.

a quick healthy meal with this amazing coconut drink, the combination of all the ingredients gives a lovely lemony taste but not tart at all, the honeys well as the sweetness from the drink adds that hint of sweet and subtle taste of coconut and not oily.
