INGREDIENTS
3 cups cornflakes...crushed
250g butter/margarine
2 ¼ cups cake flour
½ cup sugar
1ml salt
¼ cup apricot jam (add a drop or two red food
colouring to jam)
2 xl eggs
2ml vanilla
METHOD
Cream butter & sugar & vanilla. Add eggs & beat
well. Add crushed cornflakes, flour & salt. Mix to a
soft dough. Break off pieces of dough & roll into
balls. Place on baking trays, flatten lightly with fork.
Make indentation in each flattened ball. Fill with a
little jam. Bke @180*C for 12-15 minutes.
