INGREDIENTS
4 egg whites
½ cup castor sugar
1 and ¼ cups flour
1 cup pistachios
½ cup dates
METHOD
Beat egg whites until soft peaks form.
Add castor sugar and continue beating until smooth
and glossy.
Fold in flour,pistachios and dates.
Divide mixture evenly into greased mini loaf tins and
smooth surface.
Bake at 180 degrees for 15 minutes and allow to cool
completely.
Wrap in foil and stand in a cool place for about 24 hrs.
Cut into wafer tin slices and place on a baking sheet.
Bake at 120 degrees for about 40 - 50 minutes until dry
and crisp.
