INGREDIENTS
about 1,5 kg lamb ribs
MARINADE
80 ml orange juice
15 ml soy sauce
30 ml honey
60 ml tomato sauce
15 ml oil
salt and freshly ground black pepper
POTATOES
500 g potatoes, peeled and boil
250 ml plain yoghurt
60 ml mayonnaise
30 ml finely chopped fennel
salt and freshly ground black pepper
METHOD
Preheat the oven to 180 °C.
Cut the ribs into smaller pieces.
Mix the marinade ingredients and marinate the ribs in
the mixture for
about 30 minutes or preferably overnight.
Spoon the ribs and marinade into a large roasting tin
and cover with foil.
Bake for about 30 minutes.
Remove the foil and bake until the ribs are done and
sticky.
(Turn the ribs so they brown evenly and baste
occasionally with marinade.)
POTATOES
Meanwhile drain the potatoes and add the remaining
ingredients.
Mash the potatoes and serve with the ribs and a
sliced cucumber salad.
