Quick And Easy Hot Milk Sponge Cake

INGREDIENTS

1 cup castor sugar
3 eggs (xlarge)
1 teaspoon vanilla essence
1 cup flour
2 teaspoon baking powder
2 tablespoon soft butter
½ cup milk

METHOD

Beat the sugar and eggs until thick and increased in volume. Add the essence. Sift and fold in the dry ingredients. Put the butter and milk in a little saucepan and bring to the boil. Pour in the hot milk beating continuously as you pour. Grease and line your baking pan and bake at 160 until done. Cool and decorate as desired.
