INGREDIENTS
188g butter
1 cup light brown sugar
1 egg
⅓ cup cocoa powder
2 cups cake flour
1 teaspoon baking powder
1 teaspoon bicarbonate of soda
Pinch of salt
1 tablespoon milk
200g low-fat cream cheese
200g peanut butter
2 tablespoons icing sugar
METHOD
1. Cream butter with light brown sugar, then beat in egg, cocoa powder, flour, baking powder, bicarbonate of soda and salt. Add milk and beat until smooth.
2. Place 20 scoops of mixture on greased trays, leaving 4cm between each. Bake at 180 degrees for 12-15 minutes. Allow to cool.
3. Beat cream cheese, peanut butter and icing sugar and use to sandwich the cakes.
INFO & TIPS
Mix 1 cup icing sugar, 1/2 cups cocoa powder and a little boiling water, spread over pies and decorate with white chocolate curls.
