INGREDIENTS
1 chicken cleaned and cut into pieces1 large onion
METHOD
Saute onion in a mixture of ghee (Clarified butter) and oilAdd cinnamon stick, cloves, and whole jeerooBraise well until the onions turn a light pink colour
Now add chicken as well as the following:
Red ginger garlic masalatumericrough coriander seedsdhana jeeroo powder2 grated tomatoeslemon juicewhole green chilliessaffronegg yellow food colouring powder
Cook until the chicken is done but it should still be saucy.Fry potatoes and keep aside.Boil +- 2 ½ cups basmati rice with Elachi (cardomom), cinnamon sticks and a drop of oil.Drain rice in cold water (the rice should not be too soft).Toss the potatoes and some mix veg with the rice and layer on top of the chicken.Garnish the rice with fried onions and fresh red chillies.Steam till done.Serve with spicy dhai and sambals.
