RECIPE
Your fire must not be too hot it will scorch the bottom
Put oil at the bottom of pootjie with whole green and red chillies, whole cinnamon sticks, whole Elachi (cardomom), bay leaves, curry leaves, 1 tablespoon whole jeeru (cumin)
Chop 3 big onions and braise with the oil and above then add the marinated meat with about 2 cups water
Marinate mutton in 4 tablespoon yoghurt, 1 tablespoon vinegar, 1 tablespoon lemon juice, 2 teaspoon red chilli powder, ½ teaspoon hayder, 2 teaspoon dhania (coriander), 2 teaspoon fine jeeru (cumin), 2 teaspoon garam masala
Let the meat boil for about 45 minutes and then add your peeled cut up potatoes
After another 15 to 20 minutes when the meats water gets less and meat almost cooked add 3 chopped tomatoes and 1 teaspoon chilli powder
Then add 5 cups boiling water
Add 2 teaspoon salt for the rice to boil
Then add 3 cups rice
Cook till all combined and water burns out and potatoes soft it must not scorch watch it regularly
Garnish with Freshly chopped dhania (coriander)
