RECIPE
For the chicken:1 kg chicken11/2 teaspoon ground ginger and garlic Ground green chilli to taste¼ cup each fresh parsley and coriander, chopped2 tablespoon squeezed fresh lemon juiceSalt & pepper½ teaspoon paprika1 teaspoon Chicken spice3 tablespoon Olive oil4 heaped tablespoon butter1 teaspoon fresh ground garlic2-3 tablespoon mayonnaise or garlic mayonnaise¼ teaspoon turmericPinch of sugarOptional: Nandos lemon and herb sauce
Mix everything together and add to chicken.For the veggies:3 potatoes, cut into wedges and par-cooked¼ red pepper, cut into pieces½ onion, cut into wedges1 small fennel, cut into wedges1 carrot, slicedAdd mixed herbs, salt and pepper, paprika, garlic and olive oilBake on 200c covered till mostly cooked and then remove covering to grill slightly.
Adaptations by @hrns_cuisine I subbed the fennel with leeks I cooked on the stove top until almost cooked then grilled in the baked in the oven at 180 degrees C without covering.
