INGREDIENTS
100g butter melted1 ½ packets tennis biscuits
250g smooth cream cheese1 can condensed milk75ml lemon juice1 teaspoon strawberry essence4 teaspoon gelatine1 cup cold water250ml fresh cream
Strawberries/ seasonal fruit1 teaspoon heaped ghas powder2 cup water¾ cip sugarA drop pink colouring
METHOD
Crush biscuit, mix with melted butter and press firmly onto base of spring form tin and refrigerate
Whip fresh cream and keep aside
Whisk cream cheese, lemon juice, essence, condensed milk until smooth
Put water and gelatine in a saucepan and heat until dissolved add to cream cheese mixture
Fold whipped cram to cream cheese mixture
Pour over base refrigerate until partially set
Place ghas, sugar, colouring and water in a saucepan, bring to a rapid boil, allow to cool
Place fruit over cheesecake and and ghas mixture refrigerate overnight or until set
