INGREDIENTS
1/2kg chicken fillet(cut in strips)
2 cups long grain basmati rice
4cloves fresh garlic grated
green chillies thinly sliced
freshly ground black pepper
2tspn paprika spice
2tspn bbq spice(robertsons)
2tspn chicken spice(robertsons)
Juice of 1 lemon
1 onion finely sliced
3 tomatoes cubed small
ghee (Clarified butter)
METHOD
Par Boil rice with a pinch of turmeric powder and salt. Once done drain and set aside. Marinate chicken with all of the spices, garlic and green chillies. Cook in ghee (Clarified butter) till chicken is done. Mix in the rice coating well with the spicy chicken. Pit onion in a pan with little ghee (Clarified butter) and saute till soft, then add tomatoes and saute for 2 minutes. Take this mixture and add to the rice, mix it through and put in oven to steam till rice is soft. Garnish with chopped parsely. Serve with raita.
