INGREDIENTS
8 egg whites1 tablespoon vinegar1 and ¾ cup castor sugar1 teaspoon vanilla essence1 tablespoon maizena (corn flour) (corn flour)Pink colouring 500 ml fresh cream2 punnets strawberries200g dairy milk chocolate
METHOD
Beat eggs and vinegar very well and then gradually start adding the sugar. Then add the vanilla, colouring and maizena (corn flour) (corn flour). Grease a flat oven pan, place baking paper and grease the paper as well. Smear meringue mix in two equal circles on to the paper.Bake on 140 for 20 minutes then lower to 120 and bake for another 30 minutes. Sweeten cream and whip. Once meringues have cooled layer them with whipped cream and strawberries in between and on top. Melt chocolate and drizzle on top.

I often half this recipe. Do not make well in advance as it gets soggy.
