- 4 egg whites- ¼ teaspoon Cream of Tartar- 190g caster sugar- 1 ½ teaspoon cornflour- 250ml double cream- Fresh fruits (e.g., berries) for garnish
METHOD
1. Separate the egg whites from the yolks. Add the cream of tartar and beat until frothy.2. Mix the cornflour and sugar. Gradually add 1-2 tablespoons of sugar at a time, beating well until fully incorporated. Continue beating for 5-8 minutes until the sugar dissolves and a thick meringue forms.3. Transfer the meringue to a piping bag fitted with a round nozzle. Pipe onto parchment paper to desired size. Create a shallow indentation in the centre with the back of a spoon.4. Bake in a preheated oven at 140°C for 25-30 minutes. Allow to cool completely.5. Whip the double cream and pipe onto the cooled pavlovas. Garnish with fresh berries.
