INGREDIENTS
125g butter1 cup sugar3 eggs¾ cup coconut1 teaspoon peppermint essence¼ teaspoon green coloring1 ¾ cup flour2 teaspoon baking powder2/3 cup milk
METHOD
Beat butter and sugar well...add eggs one at a time.add coconut,essence and colour..fold in dry ingredients..add milk..pour into greased round pan..bake at 180 for 30-35 minutes..allow to cool..turn out onto rack..cut equally into 4 slices..Beat 1 fresh cream with 2 tablespoon icing sugar,and a drop of green colour till stiff..spread between the layers..Make a choc ganache,by melting a plain slab..mix in ±6 tablespoon nestle cream..pour over cake..top with grated areo..
