INGREDIENTS
1 cup self-raising flour1 pinch salt¾ cup castor sugar1 cup dessicated coconut125g butter - melted½ cup milk2 eggs1 teaspoon vanilla essence
ICING1 ⅓ cups icing sugar1 tablespoon butter2 tblspns boiling water1 drop pink liquid food colouring½ cup dessicated coconut to decorate
METHOD
Preheat oven to 160 degrees. Add flour, salt, sugar, coconut and melted butter in a bowl. Mix well. Stir in beaten eggs, milk and vanilla.Spread mixture into a greased slice tray and bake at 160C for 25-30 minutes. Remove and allow to cool.
Icing: Place icing sugar and butter in a bowl. Pour in enough boiling water to make a thick paste. Add a drop of food colouring and spead onto slice. Sprinkle with coconut.
