Chicken and Mushroom Filling for Pies(Marriam Sayed-Watalotwegot)
~Cut 2 chicken fillets into small cubes,
~marinate cubes with ginger/garlic paste,
~salt to taste,
~pinch of turmeric,
~robertsons peri-peri spice ±½ teaspoon (not too strong),
~cook the above in onion braised until soft in ghee (Clarified butter),
~also add in sliced mushrooms(amount according to your preference)
~Allow to cook until water drys up and fillets are cooked!
~When dry, make a little thick white sauce and add to cooked chicken!(Tip : I make white sauce and keep extra in fridge, for when I might need again;-) )
~Allow to cool completely, before filling pies!
~ensure the filling isn't too close to edge of puff pastry, to prevent it from oozing out when baking.
