INGREDIENTS
Jungle OatsBarley(weetbix-optional)
Sliced onionGreen chilliesFreshly minced ginger and garlicChicken filletBlack pepperChilli powderTumericSalt to tasteMethi (Fenugreek) masaladhania (coriander)-Jeeru (Cumin) powderGaram masala
Cinnamon stickJeeru (Cumin)Elachie
Chopped mintChopped dhania (coriander)Chopped shallot
Freshly squeezed lemon juice
METHOD
In a suitable microwave-safe dish, add barley,oats and weetbix if using,cover with enough water and cook for about 5 minutes until soft. (cooking time will vary).Leave aside
In a pot heat oil and ghee (Clarified butter),add in the whole spices,followed by cubed chicken fillet and the rest of the dried spices. Cook until done. Shred if desired.
Add in the cooked oats and barley mix,some more water if desired,boil for 5 minutes after stirring well. Blitz with a hand-blender if desired (I didnt)
Garnish with greens and freshly squeezed lemon juice.
Serve hot with naan or crusty bread.
