
Cup Cakes

125g butter
2 tablespoon oil
¾ cup sugar
3 eggs
1 teaspoon lemon or vanilla essence
2 cups flour
21/2 teaspoon baking powder
¼ cup milk
¼ cup water
METHOD
Preheat oven to 180, sift flour and baking powder together, set aside. Beat butter, oil and sugar till light, add eggs and essence and beat until well combined. Add sifted flour and baking powder, milk and water, beat on high speed for about 3 minutes. Spoon mixture into lined muffin pans and bake until done, about 12-15 minutes. cool and decorate as desired.
