3 cups fruit cake mix
¼ cup sugar (brown)
1 ½ cups water
1 teaspoon bi-carb
2 cups flour
1 heaped teaspoon baking powder
3 tablespoon cardomom powder
1 teaspoon cinnamon
slivered almonds to decorate
1. Place the fruit, sugar, butter, water and bi-carb in a saucepan and allow the mixture to boil gently for 25 minutes, stirring well.
2. Remove from heat and leave till luke warm. Leave to cool.
3. Add flour, egg and baking powder and vanilla.
4. Blend thoroughly .
5. Place mixture in a well greased baking tin and bake for 1 or 1 ¼ hours. Individual cooking times may vary. Bake at 180 C.
6. Allow to cool in pan

This is a new twist on an old time favourite.
Adding cardomom powder makes for a fruit cake with a delicious-difference. If desired omit cardomom powder and use cinnamon and mixed spice for a traditional fruit cake.
